  2. Coconut is a fruit because it is a fibrous one-seeded drupe.

  3. Coconut is a nut because a loose definition of a nut is nothing but a one-seeded ‘fruit’.

When I was transitioning from the Standard America Diet to healthier food choices.

Dairy was the hardest food for me to eliminate.

It took me months to let go of dairy products and I fought it all the way. I needed my Dairy Fix. HA!

However, I finally let go of dairy, and I feel sooo much better now!!!

Because when I eliminated dairy from my diet, I stopped having flare-ups.

That was over 15 years ago, and I have never had a flare-up since! Awesome, right?

However, I still wanted all the options and textures of dairy without the inflammation.

Coconut to the rescue. It’s a healthy and delicious replacement for dairy.

Coconut is one of the most versatile foods on the planet. Plus, it’s classified as a “Superfood.”

Coconut Based Food Items

    • The most used, and can be used for just about anything, is Coconut oil. Replace Dairy with Coconut

    • Coconut manna/butter – This is great for dips, fruit spreads, and icings.

    • Coconut water – Drink it every day; use too thin-out sauces and dips. (Look at this post on Everyday Drinking Water for more info.)

    • Make smoothies with Coconut milk, also for cooking and drinking.

    • Add to coffee and tea, and for cooking, use Coconut creamer. Replace Dairy with Coconut

    • For baking and thickening sauces, use Coconut flour

    • Coconut, shredded – For baking, yogurt, salads,

    • Coconut Chips – Add to yogurt, fruit salads, and it makes a great snack.

    • For a guilt-free dessert, eat Coconut ice cream.

    • Coconut base cheese (slices and shredded) – Use in wraps, cooking, and melting.

    • Coconut wraps – Fill with anything, eggs, meats, veggies.

Coconut Based Recipes

Coconut Flour Chocolate Chip Cookies

Preheat the oven to 350 degrees ~ Bake for 8 to 10 min. ~ Makes 12 bite-sized cookies. Replace Dairy with Coconut

Ingredients

  • 6 Tbsp. Coconut flour

  • 2 Tbsp. Almond butter

  • 2 Tbsp. Coconut butter

  • 4 Tbsp. Raw honey

  • 2 tsp Vanilla extract

  • 1/4 tsp Himalayan sea salt

  • 1/4 cup Chocolate chips

Instructions Replace Dairy with Coconut

  • Line a baking sheet with parchment paper.

  • Melt coconut butter and honey until soft and mixable.

  • Mix all ingredients (except chocolate chips); coconut flour will soak up all moisture.

  • The dough will be slightly sticky.

  • Add chocolate chips when the dough has cooled.

  • Divide into 6 medium or 12 small balls and flatten slightly on the baking sheet.

  • Bake until the edges are lightly golden, about 8 to 10 minutes.

  • These can over-bake quickly, so keep a close eye on them.

  • Let cookies cool before removing them from the baking sheet to prevent crumbling.

  • Serve with coconut milk. Enjoy!


Chicken Salad Coconut Wraps

6 to 8 Servings

Ingredients Replace Dairy with Coconut

  • 3 cups Chicken chopped

  • ¾ cup Vegan Mayo

  • ¼ cup Pecans pieces

  • ¼ cup Dried cranberries

  • 1 slice of Vegan Cheese

  • ½ hand full Broccoli sprouts

  • 2 leaf’s of Butter lettuce

  • Coconut wraps

Instructions

  • Mix the first four ingredients

  • Fill wrap with about 1/3 cup of the chicken salad

  • Top with broccoli sprouts, vegan cheese, and lettuce

  • Wrap it up, and enjoy

Other options

  • Tuna salad
  • Eggs & ham scrabble and vegan cheese
  • Fruit
  • Leftovers
  • Just about anything

Coconut Meltaway Candies 

Servings 21 candies – Prep Time 15 minutes

Ingredients Replace Dairy with Coconut

  • 3/4 cup Coconut butter
  • 3/4 cup Coconut oil
  • pinch of Sea salt
  • 3tsp Vanilla extract
  • Optional – Mini chocolate chips, Vanilla bean powder, Peppermint extract

Instructions

  • Melt coconut butter and coconut oil in a small double broiler pan over medium-low heat.
  • Add vanilla extract and sea salt.
  • Stir well with a spoon until the mixture is melted and well combined.
  • Pour into ice cube trays or silicone molds of your choice
  • Then freeze for one hour.
  • After 1 hour, store in the fridge.

Coconut Milk Banana Power Smoothie

Makes 16oz.

Replace Dairy with Coconut

Ingredients

  • 1.5 cups of Coconut milk

  • 1/2 frozen Banana

  • 2 or 3 Strawberries

  • 1/4 cup frozen Kale

  • 1 scoop of Almond butter

  • 2 tbsp Collagen powder

Any other supplements can be added as well.

Mix all ingredients in a blender… Enjoy! 🙂


Coconut Yogurt Chive Dip

Makes 1 cup

Replace Dairy with Coconut

Ingredients

  • 1 cup plain Coconut yogurt

  • 1 tablespoon Lemon juice

  • 2 tablespoons Chives

  • ¼ teaspoon of Himalayan Salt

  • ¼ tsp Pepper

Instructions

  • Mix all ingredients

  • Refrigerate for 30 min. before use

  • Dip sweet potato fries, veggies, and chicken

Note: The recommended coconut items can be found at your local health food store, or the health food section at the grocery store, or online.
